SPECIFICATIONS.
Chromatographically purified, salt-free, soluble, lyophilized powder.
Free of proteases, alpha-amylase, carboxypeptidases and elastase.
Stable 9-12 months at 5°C. Stable 1-2 years at -20°C.
30,000-45,000 units per mg of protein.
One unit releases 1 µmole of fatty acid per 60 minutes from emulsified olive oil at pH 7.8 and 37°C.

Purified by ion-exchange and gel diffusion chromatography by methods developed in our laboratory.
